Fudgy Chocolate Brownies

I'm calling these fudgy brownies as some people mistakenly call cake slices brownies. Oh no, no, no!

A brownie must always be a rich chocolatey slice of heaven that is on the fudgy side. If you want a slice of cake, have a slice of cake. Leave our brownies alone!

There, rant over.

To make these fudgy brownies even more special I folded some golden pineapple into the brownie batter and once the tray bake was cool, I topped it with chocolate fudge icing and finished it with slices of pineapple and some dark chocolate strands.

The prefect luxury slice for your guests this festive season.

How do you make fudgy brownies?

So what's my secret to really fudgy brownies? I pop them in the fridge overnight. Believe me, if you can leave them alone in the fridge until the next day you will reap the benefits. What comes out the fridge is the most indulgent chocolate treat imaginable.

Honestly try it and see. You'll thank me for the tip.

Flax eggs

If you're vegetarian, you can make these brownies with standard eggs, but for this recipe I used flax eggs in place of eggs, so everyone can enjoy them.

How do you make flax eggs?

Flax eggs are really simple to make. Just whizz up flax seeds, which are also called linseeds, in a blender or food processor until you have a powder.

For each egg, mix 1 tablespoon of flax seed powder with 3 tablespoons of water.

For this recipe you need 3 flax eggs so that's 3 tbsp of flax seed powder mixed with 9 tbsp of water. Once it's mixed you leave the bowl in the fridge for 20 to 30 minutes until the flax eggs have become gloopy. At this point they are ready to add to the mixture.

Tinned Pineapple

As I mentioned before I added pineapple to these brownies. Brownies can include dried fruit but I sometimes include fresh fruit, which adds a different texture to the brownies. Blueberries, raspberries and pineapple are all good choices.

Now I say fresh fruit and you may raise your eyebrows when I call tinned fruit fresh, but it's actually cut and packed so quickly that it is fresh and tinned fruit can have more nutrients than the fruit that has travelled the world, been stored in warehouses, then sat on a supermarket shelf for a week or two.

Tinned pineapple is a great store cupboard standby. It's convenient and there's a lot less waste than there is with a whole pineapple, which can be hard to use all at once, as well as all that faffing about cutting it.

Del Monte Gold Pineapple

I used Del Monte Gold Pineapple in my brownies and as a topping. Del Monte are the Yoda of canned fruit with over 125 years of expertise. They are well known for the quality of their fruit and their new pineapple variety is naturally extra sweet as it is left longer to ripen before it is picked. It also has four times the Vitamin C of traditional canned pineapple.

Look for the black label, when you're shopping this week. The Del Monte Gold®range is available online or in store at Tesco, Asda, Ocado and Nisa Local at the RRP £1.30.

fudge brownie toppings

I topped my brownies with chocolate fudge icing. I use Betty Crocker which is delicious stuff and suitable for vegans. Then I decorated the brownies with pineapple chunks and chocolate strands. I brushed the pineapple with a little edible gold dust, which you can buy from Tesco. For that little Christmassy touch, but it's up to you if you use it.

FAQs

What makes brownies cakey vs fudgy? ›

Fudgy brownies have a higher fat-to-flour ratio than cakey ones. So add more fat—in this case, butter and chocolate. A cakey batch has more flour and relies on baking powder for leavening. The amount of sugar and eggs does not change whether you're going fudgy or cakey.

What's the difference between brownies and fudge brownies? ›

Brownies have a cake-like texture with a crispy top and a moist, fudgy center and are typically baked in a rectangular pan. Fudge, on the other hand, is typically made by cooking a mixture of sugar, butter, and milk or cream until it reaches a soft, chewy consistency.

Why are my brownies never fudgy? ›

Achieving a fudgy brownie is all to do with the ratio of fat to flour. A fudgy brownie recipe will use more fat than flour. Generally this is achieved by adding more butter or real chocolate to your brownie recipe. A cakey brownie recipe on the other hand will call for more flour in the ratio of fat to flour.

How do you keep brownies fudgy? ›

Wrapping aluminum foil around individual brownies or a tin of brownies will block the air from entering and preserve their chewy nature.

What happens if I add an extra egg to brownie mix? ›

If you opt to add more eggs, say double the amount, something interesting happens. Even though you are adding more moisture, the air bubbles that you catch in the extra eggs add volume, which decreases the density of your final product. This makes your brownies rise and gives them a much more cake-like texture.

Is butter or oil better for brownies? ›

Oil Brownies: These were chewier with crunchier edges and a crunchier topping. They were more matte on top with a far less crinkly shiny brownie 'skin. ' They tasted more like box mix brownies. Butter Brownies: These were much fudgier, softer, and had a melt-in-your-mouth texture.

Why are they called S * * * * * brownies? ›

The Londoner describes why they called them "slu*tty brownies" perfectly: "they're oh so easy, and more than a little bit filthy." Just as simple as I would've imagined. They are as easy to make as they are messy to eat. If you look up slu*tty Brownies on Pinterest there are thousands of recipes listed.

What is the old version of brownies? ›

Did you know that Brownies were originally called 'Rosebuds'? Rosebuds was established in 1914 for girls to join before they became Guides. Just one year later, the name was changed to Brownies. Brownies are the second-youngest members of the Girlguiding family, for girls aged between 7 and 10.

Can brownies be too fudgy? ›

Problem 2: My brownies are too GOOEY

(Is there such thing?) Honestly, there is a slim chance they are underbaked, but it's more likely that they just need to firm up in the fridge.

How to make box brownie mix better? ›

When the back-of-box instructions call for water, try some instant espresso or strong-brewed coffee for roasty, toasty notes that pair impeccably with chocolate. Or use milk or half-and-half for even more richness. And for cakey instead of fudgy brownies, add an extra egg for more lift and spring.

Should brownies be baked on top or bottom heat? ›

I wouldn't recommend baking brownies on the top and bottom racks of the oven simultaneously. This is because the heat distribution in the oven may vary and the brownies on one rack may cook faster than the other. Additionally, switching the brownies halfway through the baking time could also result in uneven baking.

Should fudgy brownies be refrigerated? ›

Do Brownies Need to Be Refrigerated? Brownies don't need to be refrigerated, but they'll hold up a few more days if they are. Unless your brownies include more perishable ingredients like fresh fruit or cream cheese frosting, they'll be fine at room temperature as long as they're stored in an airtight container.

Can you eat week old brownies? ›

You can keep brownies in the fridge for up to one week on average. You might want to do this if you add sour cream, cream cheese, or any other perishable ingredients. Store brownies in the freezer for up to 3 months, wrapped in aluminum foil, and stored in an airtight container.

Does putting brownies in the fridge make them fudgier? ›

In fact, they solidify into even more fudgy brownie bits if you chill them in the fridge before slicing and serving. If you prefer less rich and gooey brownies, add 5 to 10 minutes to the baking time.

How to make box brownies more cakey?

How do you tell if brownies are fudgy or undercooked? ›

To test for doneness with a toothpick, insert a toothpick into the center of the brownies and pull it back out. For fudgy brownies, you'll want to see some moist crumbs attached to the toothpick when you pull it back out. If it looks like it's covered in brownie batter, the brownies will need to bake a bit longer.
